Job Description

• The Head Chef is responsible for the kitchen operations of the Vinason Pho Kitchen, including preparing meals, ordering supplies and supervising kitchen staff.

• Develop menus and prepare meals for the Vinason Pho Kitchen’s locations.

• Develop new recipes that focuses on quality, consistency and authenticity.

• Order fresh foods and kitchen supplies needed for daily production.

• Conduct regular food inventories and monitor food costs.

• Assure maintenance of kitchens and equipment in clean, safe and operable condition.

• Supervise kitchen staff and set up work standards and policies for all staff to abide by.

• Plan and conduct training and mentoring sessions for kitchen staff to improve personnel capabilities and promote positive work environment.

Requirement

• Expertise of Vietnamese food preparation, including cooking, tasting, texture finetuning and dishes presentation.

• Expertise of developing menus and recipes for Vietnamese restaurants.

• Knowledge of kitchen equipment and proper operation.

• Knowledge of storage, rotation, health and safety for all food items.

• Knowledge of food costs management for Vietnamese restaurants.

• Experience in managing Vietnamese restaurant kitchens including staff hiring, training, scheduling and performance review.

• Must possess expertise/knowledge sufficient to adequately perform the duties of the job being offered. Expertise/knowledge may be gained through employment experience or education. Such expertise/knowledge can not be quantified by time.

Qualifications

This position requires a High School Diploma (or foreign equivalent) plus 2 years of work experience as a head chef or executive chef, or in a closely related occupation.
